Description
Wild raspberries don't grow in fields. They appear in forest clearings and along woodland edges in Lithuania, scattered and untended, following their own season. The bees find them during a brief window in early summer. Because the plants grow in isolated patches rather than open fields, the harvest is always small. There's no scaling this one up.
The colour is light amber and the aroma is delicate, floral and faintly fruity without ever smelling artificial or sweet in an obvious way. It's subtle enough that you might not immediately place it, but distinctive enough that once you know it you'll recognise it instantly. The flavour follows the same logic. Gently sweet, clean at the finish, with just a trace of blossom that lingers softly. Nothing sharp, nothing heavy.
Raw, unheated, nothing added. The flavour is there because it was left intact, not because anything was done to it.
The honey that surprises people most. Subtle enough for daily use, distinct enough that people keep coming back to it without quite knowing why.
