Description
This one doesn't come from flowers. It comes from honeydew, a substance left by tiny insects that feed on tree sap, which the bees collect from the old mixed forests of Lithuania and turn into something completely unlike anything blossom-based.
The colour shifts between deep brown and warm rosy tones depending on the season. The smell is earthy and woody with something slightly resinous underneath, like the forest itself. The taste is smooth and less sweet than most honeys, with a low spice and a quiet depth that builds slowly. There's no single note you can point to. It just stays with you.
Higher in minerals than floral honeys, naturally prebiotic, raw and untouched from forest to jar.
If you know honey well, this will probably become your favourite. If you're new to it, it might take a few spoonfuls to get. Either way it's worth the patience.
