The colour is pale and golden, the texture smooth and creamy, the smell light and clean with a soft floral freshness. The flavour is mild and straightforwardly sweet. No bitterness, no intensity, nothing that asks much of you. That simplicity is the point.
This is the one for breakfast. For tea. For toast with butter, for stirring into porridge, for giving to kids. Most spring and rape honey in supermarkets has been pasteurised and stripped of its natural character.
